Fruit and Nut Fudge

  Fruit and nut fudge is delectable home made confectionery with milk and white chocolate. This rich and creamy delight is also a perfect holiday treat . There are so many different versions and flavors of fudge out there.You can do this recipe with dark chocolate too. Also add any dried or caramelized fruit and nuts of your choice.
Ingredients
Condensed milk- 1 tin
Butter-2 Tbs
Vanilla essence- 3/4 tsp
Rose essence - a few drops(optional)
 Milk chocolate-  1 1/2 cup
 Pistachios/ Chopped nuts of your choice- 1/3 cup
Glazed Cherries- 1/4 cup


Heat condensed milk and butter in a heavy bottom pan on low flame. Stir continiously till it comes to a boil.Simmer for another 3-4  minutes .If you have a candy thermometer the temperature should reach  230 degree or the soft ball stage. To check whether it reached the soft ball stage drop half a spoon of the mixture into cold water. After a few seconds you will be able to take it out from the water and press into a soft ball.
Switch off the heat and add 1 tsp vanilla and white chocolate. Continuously whisk till all the chocolate gets incorporated and you have a smooth texture and finally add rose essence,glazed cherries and chopped nut. Continue whisking till the mixture starts thickening.
Prepare an eight inch square pan. Line it with aluminum foil or with wax paper. Pour the mixture and spread evenly with the back of a spoon. Allow this to set for about two hours and then chill it in fridge,preferably over night. Once it is firm to touch  cut into pieces and serve.
